Friday Night Dinner Success!

Last night was the Frito Pie Casserole and Alfredo Pasta Casserole dinner night and it was a huge success!  Everything turned out delicious!

I had never made Frito Pie Casserole before so I looked to Pinterest for inspiration and found a recipe on Mix and Match Mama’s Blog.  Below is the recipe that I followed.  Just a quick note – I follow all recipes VERY loosely.  I like to switch things up and add things here and there. For example, I added ground turkey instead of ground beef and only did one layer of all of the ingredients in a 15-inch x 10-inch x 2-inch rectangular baking dish because that was all that I had but it worked AMAZING!

1 pound ground beef
1 onion, chopped
1 package taco seasoning
1 bag Frito style chips
1 can corn
1 (16 oz) can chili no beans
3 cups cheddar cheese, shredded
Sour cream to garnish
Preheat oven to 350 degrees.
 Over medium-high heat, cook beef in skillet until browned and crumbly.  Add in onions and seasoning and saute a few minutes.  In a 9 x 13 dish,  layer the ingredients two times, in this order: Fritos, corn, chili, seasoned meat and cheese, repeat. COVER and bake about 25 to 30 minutes or until bubbly and hot in the center.  
Garnish with sour cream.

The next recipe I made was a pasta Alfredo with broccoli.  For this one, I just made up the recipe as I went along but here is a basic ingredients/cooking guide:

I box of pasta (Any kind of pasta works – I used ziti.  Wheat pasta is great, too!)
1 bag of frozen broccoli (You can use fresh, also!)
1 (15 oz) jar Alfredo sauce
1 cup shredded Parmesan cheese
1 package of mozzarella cheese (2 cups)
1/2 teaspoon garlic powder
1/4 teaspoon Italian seasoning
salt and pepper to taste
1/2 cup Panko bread crumbs
2 tablespoons butter, sliced into squares

Preheat oven to 350 degrees.

Boil pasta and broccoli until tender. Remove from heat, drain water, and pour pasta and broccoli into casserole pan (I used a 9×13 pan for this casserole!).  Pour in the Alfredo sauce, sprinkle in half of the  Parmesan and half of the mozzarella and mix. Season with garlic salt, basil, and salt and pepper and mix.   Sprinkle the remaining parmesan and mozzarella on the top of the casserole.  Sprinkle the breadcrumbs on top of the cheese.  Put slices of cheese on top of the breadcrumbs. Bake for 25-30 minutes or until the cheese is melted, the edges are bubbly, and the breadcrumbs slightly brown.

These casseroles are definitely comfort foods and would be terrific for potluck dinners!  They were super easy and fun and appealed to everyone’s tastes.  A neat thing is – they can all be adjusted for personal preferences – chicken can be added to the Alfredo and you could also make a vegetarian version of the Frito Pie Casserole using boca meat or even refried beans!  Super cool!

Tonight, I turn back to Mix and Match Mama but this time to make a King Ranch Casserole.  I have everything in the house except the Rotel tomatoes but I have diced tomatoes and jalapenos so we shall see how it goes!  Pictures later!
